The municipality of Carnotais divided in five parishes which they dedicate at least one Holiday to its patron or patroness throughout the year.

Normally, the day before the holiday is announced with fireworks, bagpipers and some musical or theatrical performance accompanied by the typical grilled sardine cookout. The holiday days, the neighborhood wakes up with the roar of the fireworks and with the bagpipers or bands music which walks the streets playing at sunrise. During the morning, several masses in honor to its patron/patroness are held, and after a religious procession in some cases, some bands liven up a dance where the locals and visitors are involved.

It is common for family gatherings for food feasting whichlasts until late afternoon. In the evening a festival is held outdoors that it does not finish until the wee hours.

Amongs the traditional patron holidays, it is important to talk about the novelty of food exaltation festivals, which displays local cooking for all to enjoy and try both for locals and visitors.
